Stop, Drop and Roll: Easy Chicken “Rollatini”
For those who know me, I don’t really cook much. And I’m not a creative “chef” at all. But this is a quick and easy chicken dish that takes me 10 minutes at most and everyone loves. I always make extra because I may not feel the need to cook again for a while.
What you’ll need: chicken breast, fresh spinach, tomato sauce, shredded mozzarella and ricotta cheese.
I slice the chicken breasts in half or even thirds to make them thin. In a bowl I simply combine the mozzarella cheese and ricotta. I am sure, someone with some better skills would add some herbs, etc (garlic, oregano, salt and pepper). In a baking dish, spread some tomato sauce on the bottom. Take a spoonful of the cheese mix and place in the middle of the chicken with a handful of fresh spinach. Roll and place in the dish. Bake for about 30 min at 350 or so. The chicken is thin so it cooks through pretty quickly and you don’t want it to dry out.
Approximate nutrition: Practically all protein! Seriously, this is a great go-to. Combine with zucchini noodles or any extra veggies on the side. Have a salad to start. No starch needed for this one.
